Our Summer - Part 3 - August

We were lucky enough to head back down to LA for one more week with our Canadian cousins where we spent most of our days in the pool or at the beach.

We had a great time and miss our lazy summer days!

Favorite Recipe

Toffee

2 1/2 c. caster sugar
1/4 c. white corn syrup
1/2 c. water
1 lb butter
3 large milk chocolate bars (I use choc bars from trader joes)
2 lb pecan halves (trader joes or costco is cheapest)
1/2 lb finely chopped nuts to sprinkle over chocolate

Combine first 4 ingredients in heavy kettle and cook slowly to hard crack stirring occasionally. Melt 1/2 of choc in double boiler. (I do it in the microwave 30 sec at a time). Prepare 2 cookie sheets by laying the pecan halves all over, but not touching. Pour candy quickly over nuts and pour the melted half of the choc over hot candy. Springke with half of the finely chopped nuts and press in lightly with fingers. Let sit over night or until harden. Turn over and repeat with choc and chopped nuts.
